Grasshopper Pie

Ingredients

2 c. miniature marshmallows

1/3 c. half and half

3 or 4 T. creme de menthe

2 or 3 T. creme de cacao

1 c. whipping cream

green food coloring, if desired

chocolate crumb crust

Directions

Dissolve the marshmallows in the half and half in a double boiler over hot water, stirring constantly.
Cool slightly, then stir in the creme de menthe and cacao and cool completely.
Whip the cream and stir into the cooled mixture.
If desired, add a drop or two of green coloring.
Pour into a chocolate crumb crust.
Chill well or freeze, as desired.

Notes

Another favorite of Jean’s. When she could not find a chocolate crumb crust, she would melt chocolate chips and spread them on the bottom of a graham cracker crust and let the chocolate set up before adding the filling. Since Jean did not patronize liquor stores, she sometimes needed help to obtain the “spirited” ingredients. Once a fellow teacher volunteered to get her the ingredients she needed for grasshopper pie. He later gave her a brown paper bag containing a jar filled with grasshoppers!

Sometimes it ends up clumpy. Last time, it sure if cream was over whipped, or marshmallows were too old, or mixture was too hot. Added whipped cream to cooled mixture, maybe try adding mixture to whipped cream?

June 13 2020 - Trying clear Cremers de menthe, 16 drops food coloring, refrigerate melted mixture

March 2023 - Cooled marshmallows for several minutes before adding liquor, cooled to room temp before combining. Added mixture to whipped cream. Seemed smooth. Green crème de menthe, four drops of food color gel,
